Balsamic Beet and Feta Salad

Try this beautifully colored salad filled with nutrients and 6 grams of fiber per serving! That’s already more than half of what I recommend my clients to get in one meal!

Ingredients
  

  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Honey optional for increased sweetness
  • 1/2 tsp Sea Salt
  • cups Beets steamed, peeled, and chopped
  • 1 Avocado chopped
  • 1 Tomato medium-sized, chopped
  • 2 cups Arugula chopped
  • ½ cup Feta Cheese
  • ¼ cup Pumpkin Seeds roasted preferred

Instructions
 

  • In a medium bowl, add the olive oil, balsamic vinegar, honey (optional), and salt.
  • Whisk these ingredients to combine
  • Add the rest of the ingredients
  • Toss to combine

Tips & Notes

  • Beets: You can find these pre-packaged and refrigerated, usually in the produce department of supermarkets. Or you can steam and peel raw beets
  • Serve Cold. Serving size is about ¾ cup

Additional Flavor

  • Add chopped fresh herbs. Basil works great with these flavors. Add red onion for a bright but tart flavor.
