Balsamic Beet and Feta Salad
Try this beautifully colored salad filled with nutrients and 6 grams of fiber per serving! That’s already more than half of what I recommend my clients to get in one meal!

- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tbsp Honey optional for increased sweetness
- 1/2 tsp Sea Salt
- 1½ cups Beets steamed, peeled, and chopped
- 1 Avocado chopped
- 1 Tomato medium-sized, chopped
- 2 cups Arugula chopped
- ½ cup Feta Cheese
- ¼ cup Pumpkin Seeds roasted preferred
In a medium bowl, add the olive oil, balsamic vinegar, honey (optional), and salt.
Whisk these ingredients to combine
Add the rest of the ingredients
Toss to combine
Tips & Notes
Beets: You can find these pre-packaged and refrigerated, usually in the produce department of supermarkets. Or you can steam and peel raw beets
Serve Cold. Serving size is about ¾ cup
