High Protein Breakfast Bake

This High Protein Breakfast Bake contains multiple ingredients serving up an easy to make, high protein breakfast option. Proteins include eggs, Greek yogurt, and protein powder. Simply whip this together and pop in the over for a delicious balanced breakfast!

Ingredients
  

  • 8 Eggs
  • ½ cup Greek Yogurt plain
  • 1 scoop Vanilla Protein Powder or 1/4 cup
  • 1/4 cup Flax Seed ground
  • 2 tsp Stevia Powder or 2 tbsp maple syrup
  • 1 tsp Salt
  • 2 cups Blueberries fresh or frozen

Instructions
 

  • Preheat oven to 375 degrees F. Grease a 9x13 pan.
  • In a large bowl, whisk the eggs.
  • Stir in the yogurt, protein powder, flax, sweetener, and salt.
  • Stir in the blueberries and evenly distribute (if using frozen blueberries, watch the batter turn purple).
  • Bake in the oven for 25 minutes until browned (test if the center is cooked by inserting a knife and if it comes out clean).
  • Let cool completely. Better yet, let it cook and sit in the fridge for a few hours. It tastes better after it rests.
  • Consider serving with a layer of peanut butter and more Greek yogurt to hit closer to 30g protein per serving.
