Method
- Add cottage cheese, 1/4 cup maple syrup, mint, and spinach to a blender and blend until smooth.
- Pour the mixture into a loaf pan. Stir in the chocolate chips.
- Next prepare the chocolate sauce in a separate bowl by mixing together the coconut oil, cocoa powder, and 1 Tbsp maple syrup until an even chocolatey liquid forms.
- Drizzle this sauce over the top of the ice cream mixture in the loaf pan. Use a spatula to swirl in the sauce and make a design.
- Freeze for about 3 hours. When ready to serve, remove from freezer and let thaw for 20 minutes.
- Optional: for a very creamy version, break apart the frozen ice cream into chunks and add to blender. Blend until smooth.
