Mint Chocolate Chip Cottage Cheese Ice Cream Recipe

Cottage Cheese: The Star Ingredient in this Chocolate Cottage Cheese Ice Cream
This chocolate cottage cheese ice cream uses cottage cheese to add 13 grams of protein per serving! Protein is is so important in our diet because it is the the most satiating macronutrient. Having enough protein in a meal (or dessert or snack) keeps you fuller longer while actually helping to keep blood sugar stable when you eat carbs. How to Choose a Better Cottage Cheese
Shopping for cottage cheese can be confusing. Cottage cheese comes in classic 4%, 2% low fat, and even 0% fat free. But did you know that most food products labeled as “low fat” typically contain added sugar? I want you to be more aware of added sugars and other strange fillers when picking out cottage cheese for this recipe, which may mean you’ll be buying cottage cheese that is not low-fat. Look for products that contain just milk, cream, salt, and sometimes live cultures (probiotic bacteria).
An example of a whole-food ingredient brand of cottage cheese is Good Culture. Check ingredients labels on packages to avoid filler ingredients like carrageenan, gums, and maltodextrin. Other Ingredients In This Chocolate Cottage Cheese Ice Cream
Most ice cream you find in the grocery store is loaded with sugar and other refined ingredients. But this cottage cheese ice cream is made with a fraction of the sugar and ZERO refined ingredients.
- Maple Syrup: This recipe uses 1/4 cup of maple syrup and has just 11 grams of sugar per serving. That is half the amount found in most ice creams you will find in the grocery store.
- Dark Chocolate Chips: Dark chocolate chips not only add sweetness but provide an excellent source of antioxidants and minerals such has iron, magnesium, potassium and zinc. Look for dark chocolate with at least 70-85% cocoa. Higher percentage of cocoa = lowest amount of sugar.
- Cocoa Powder: Pure cocoa powder has zero sugar and contains flavanols which can improve insulin resistance. I use it here to impart that rich chocolatey flavor to the ice cream!
- Baby Spinach: Unlike artificial coloring that makes your traditional mint chocolate chip ice cream green, this recipe uses spinach to add color. Spinach is also a great source of major micronutrients such as iron, manganese, zinc, and magnesium.
- Coconut Oil: Like protein, healthy fat found in coconut oil also fills you up without raising your blood sugar – and tastes great!

Mint Chocolate Chip Cottage Cheese Ice Cream Recipe
Ingredients
Ice Cream
- 2 cups Cottage Cheese
- 1/4 cup Maple Syrup
- ¼ tsp Mint Extract
- 1 cup Baby Spinach
- ¼ cup Dark Chocolate Chips
Chocolate Sauce / Swirl
- 2 tbsp Coconut Oil melted
- 2 tbsp Cocoa Powder
- 1 tbsp Maple Syrup
Instructions
- Add cottage cheese, 1/4 cup maple syrup, mint, and spinach to a blender and blend until smooth.
- Pour the mixture into a loaf pan. Stir in the chocolate chips.
- Next prepare the chocolate sauce in a separate bowl by mixing together the coconut oil, cocoa powder, and 1 Tbsp maple syrup until an even chocolatey liquid forms.
- Drizzle this sauce over the top of the ice cream mixture in the loaf pan. Use a spatula to swirl in the sauce and make a design.
- Freeze for about 3 hours. When ready to serve, remove from freezer and let thaw for 20 minutes.
- Optional: for a very creamy version, break apart the frozen ice cream into chunks and add to blender. Blend until smooth.
