These creamy low carb popsicles are an amazing treat in the summer heat. While ice cream is a delicious occasional treat food, you can feel good about having these low carb popsicles every day as a healthy way to finish the end of a meal.

My husband & I have been loving them as a treat at the end of dinner, especially on hot summer nights. And these popsicles are the perfect example of having delicious food that still supports your health. For a higher protein twist, you can try swapping cottage cheese for the cream cheese.

Strawberry Lime Cheesecake Low Carb Popsicles

These low carb popsicles are a healthy dessert, with just 4g carbs per serving and easy to prepare.

Ingredients
  

  • 2 cups strawberries fresh or frozen
  • 2 limes juiced
  • 8 oz cream cheese
  • 15 fl oz canned coconut milk (full fat)
  • 1 tbsp stevia powder *optional
  • 2 scoops whey protein powder *plain or vanilla
  • 1/4 tsp salt

Instructions
 

  • Add all ingredients to a blender. Pour mixture into popsicle molds, insert popsicle sticks, and freeze for about 5 hours. Remove from molds and enjoy!
  • *Note: If using a protein powder that is already sweetened, you may want to omit the stevia. Taste the mixture once blended and adjust sweetness as desired.
